Beef Share Pricing

How does Audumbla's grass-fed beef prices compare to retail store prices?

​The average price in the store for a cut of premium grass-fed ribeye steak is $20 per pound. Where as, Audumbla's average  price for the same cut of premium grass-fed ribeye is $14.00. That's a 30% savings for the best quality, best tasting beef.

 

What is hanging weight?

​Hanging weight is the weight of the beef animal after it has been field dressed but before it has been aged, cut, packaged and frozen.

 

Why use the hanging measurement?

 We use this weight measurement because we are not selling individual retail cuts but instead are selling by the quarter, halve, or whole animal. Each piece doesn't need to be weighed which is reflected in the lower cost compared to individual retail cuts.

 

How does hanging weight relate to live weight or packaged retail weight?

 As a general rule on a well finished 100% grass-fed steer, the hanging weight is 60% of the live weight and the cut and packaged meat is on average about 60% of the hanging weight.

Here is the math:

1100 lbs live weight x .6 = 660 lbs hanging weight x .6 = 396 lbs packaged meat weight on a whole beef animal. This is a general rule. If the beef animal is overly fat, the hanging weight to packaged meat yield is lower because more is trimmed off. If there isn't enough fat, the yield is also lower because there is more bone per fat / muscle.

 

How much on average does a whole beef share cost?

A whole beef animal weighs in on average at 660 lbs hanging weight. 
660 lbs hanging weight x $7.50 / lb = $4950
Processing fee = $594 ($0.90/lb)
Total = $5544

On average there would be around 396 lbs of packaged meat on a whole beef animal that has a hanging weight of 660 lbs. $5544 / 396 lbs = $14.00/lb of packaged meat.

How much on average does a half beef share cost?

A halve beef animal weighs in on average at 330 lbs hanging weight.
330 lbs hanging weight x $7.50/lb = $2475
Processing fee = $297($0.90/lb)

Total = $2772

On average there would be around 198 lbs of packaged meat on a halve beef animal that has a hanging weight of 330 lbs. $2772 / 198 lbs = $14.00/lb of packaged meat.

 

How much on average does a quarter beef share cost?

A quarter beef animal weighs in on average at 165 lbs hanging weight.
165 lbs hanging weight x $7.50/lb = $1237.50
Processing fee = $148 ($0.90/lb)
Total = $1385.50

On average there would around 99 lbs of packaged meat on a quarter beef animal that has a hanging weight of 165 lbs. $1385.50 / 99 lbs= $14.00/lb of packaged meat.

 

Shipping

Shipping prices are subject to the finished product weight. Average shipping fee for half beef share is $250.  This depends on the final weight and your location. You have the option to pick up your meat for FREE from us at Audumbla Regenerative Ranch in Inman, Nebraska.

 

Will I have room in my freezer?
 1/4 Beef Share: requires approx. 3.5 - 4.0 cubic ft. of freezer space. This will fit in a small chest/upright freezer.
1/2 Beef Share: requires approx. 7 - 8 cubic ft. of freezer space. This will fit in a medium chest/upright freezer.
Whole Beef: requires approx. 14 - 16 cubic ft. of freezer space. This will fit in a large chest/upright freezer.
We always recommend having a slightly larger freezer so it is easier to organize and access all your cuts!

 

Are you Sustainable/Regenerative/ Etc..?

We don't have any formal certifications, but our practices should qualify for any of the terms you can think of. We only produce food that we would eat ourselves or feed to our families, and strive to be transparent about our practices.

Our animals are managed to build ecosystem and soil health, and we never apply ANY synthetic fertilizers, chemicals, or pesticides.

 

What if I am not home when the meat arrives?

If you choose shipping, your meat is packed in an insulated box with plenty of ice. It should stay frozen until you get home that day.
If you are having your meat delivered by us, we will reach out to you to confirm your delivery time. If you can't be home during the delivery window, just leave a cooler outside or pick a different delivery date!
